Recipe Ideas for Your Week 1 Produce

It’s no secret that we all love to eat. I mean, that’s one of the main reasons we are here, am I right? Of course, there are other major motives: to strengthen and grow our local food system, strengthen our local economy, and to advocate for good, mindful agriculture practices and products. But, we also love to eat GOOD FOOD.

Although I am sure many of you have your go-to recipes for the sweet spring carrots and tender spinach that are coming in your share this week, the GFC team thought it might be helpful to share some new recipes that we are dying to try (carrot top pesto, anyone?) along with some of our absolute favorites:

Kale Chips (this recipe is my all-time favorite) or try this simpler version
Kale, Quinoa, and Apple Salad
One Pot Kale & Quinoa Pilaf
Chocolate Blueberry Kale Muffins

Roasted Carrots with Carrot Top Pesto
Carrot Top Soup
Ginger-roasted Carrots with Miso Dressing
Moroccan Carrot Salad (with other recipes in the link)

Carrot Apple Ginger Soup
Apple Pie Oatmeal
Quinoa and Apple Salad with Curry Dressing
Apple Brownies

Spinach, Scallion & Feta Frittata
Spinach & Scallion Risotto
Gluten-free Spinach & Carrot Muffins
Emerald Salad

Quinoa Chowder with Spinach, Feta & Scallions
Spicy Sesame & Scallion Soba Noodles
Scallion Pancakes
Green Rice

I hope this sparks your creativity in the kitchen and gets you dreaming and scheming up wholesome meals and snacks to make from your week one produce. I know that the GFC team and the rest of the GFC community would love to hear all of your favorite recipes, so please feel free to comment on the post and share links to recipes with us!
